Apple-Cinnamon Oatmeal

  • 1 cup oatmeal
  • 3 cups milk
  • 1 teaspoon butter
  • 6 tablespoons chopped Almonds
  • 1 teaspoon vanilla essence or half a vanilla bean
  • 3 apples
  • 3 tablespoon sugar
  • 1 teaspoon lemon juice
  • half a teaspoon cinnamon
  • extra milk or cream for serving
  • Honey/date syrup/maple syrup - to taste
  1. Slice and core the apples (I like to slice them about 1 cm thick or get about 12 from one apple) and place in a microwave safe bowl. Sprinkle the lemon juice, sugar and cinnamon over the apples. Toss to combine. Microwave on high for 5 minutes till soft and fragrant. Taste and adjust sugar, lemon and cinnamon. You could cook it longer if you would like the apple mushier.
  2. Boil the milk with the vanilla in a saucepan and then reduce heat to simmer and add the oatmeal. Cook, stirring, till the oatmeal is cooked and you have your preferred consistency. I go for a slightly thick mush at this point so I can add cream or milk later. Stir in the butter for beautiful buttery finish. (You could also cook the oatmeal in the microwave, stirring every 1 minute or so to prevent the oatmeal from boiling over)
  3. Dry saute (or roast) the almond pieces in a pan till they start to smell toasty and nutty. The almonds should slight brown but not too much so.
  4. To serve, ladle the oatmeal into a bowl, add more milk or cream if desired. Top with apple slices, nuts and honey/maple or date syrup.
