Weekdays can be cruel. Long, tedious, tiring, and repetitive. No wonder the meals get boring and predictable too. And yet, there are so many scrumptious little secrets that can help you quickly dish out new, unusual and delicious meals that do justice to how hard you work and painfully you travel (in Mumbai at-least . The Create Delicious Weekdays workshop will teach you versatile recipes and simple techniques that are a whole lot of fun but will also change the way you cook so that rustling up that weekday meal is a snap. And absolutely delicious too.
For example, once you learn how to make a pesto, you could easily dish it up in a matter or minutes. And stir it into your morning scrambled eggs or toss it with your pasta and green beans for brilliant lunch or layer with tomatoes and paneer for an unbelievable sandwich; maybe stir it into yogurt for a fabulous dip, spread over a pancake with sauted mushrooms.. really, the options are endless. What’s even better, at Bombay Chowparty we believe cooking is science and art. So we teach you the classic pesto recipe and right proportions but also how you can play with it and make completely new dishes depending on what you have/ what you are in the mood for! So you learn the best basil-pinenut pesto you may have had and also a fabulous kaffir lime- cilantro -chilli – cheddar version of it. Or a basic vinaigrette that can be the dressing for the perfect greek salad but also how you can transform it into a fabulous fresh sauce for that fish you want to grill.
Here is what we will cover
- Roasting fruits and vegetables into incredible caramelised goodness. Once you taste these roasted goodies, you will never turn your nose up at vegetables again
- Rustling up incredible sauces and dips. Did you know that the hummus from the Middle East, romesco from Italy, skordalia from Greece all have something in common? Learn the secret of how to come up with unusual but always delicious dips.
- Making vinaigrettes. Did you know that vinaigrettes are not only great with salads but ones like chimmichurri or a lime and peanut make wonderful sauces for meat and fish?
- Making salsas with vegetables but also seasonal fruit!
- Cooking up sweet and savory jams with tomato, onion or bacon and transform any sandwich into a thing of joy
- Whisking up flavoured homemade mayo to go with dressings and dips. Tried chilli-lime or for that matter, garlic-rosemary?
- Making pestos that include the basil-pinenut version but much much more too
And because the proof of the pudding is in the eating, lunch will be a feast of salads, pastas, sandwiches, soups and a range of appetizers from rich and beer-worthy to healthy and fresh.. all dished out with the condiments you made yourself. The workshop will be run in our domestic kitchen, so anything we do together you can do at home. The group size will be kept small and intimate so we can all share, discuss, experiment and indulge in plenty of food talk. Lots of hands-on learning, mixing, blending, tasting, drinking and plenty of the fruits of your labour to take home. It’s our idea of a party.
